🌮 my favorite recipe (new meal plan inside)

Hi,

I woke up with an itch in my throat, so I'm currently making sore-throat tea.

I hope you're feeling well and are ready for this week's meal plan.

This week features my all-time favorite recipe: taquitos.

This recipe is so popular in our home I usually double it and freeze half to save time in the future. It also makes a great lunchbox meal. Extra taquitos are always welcome.

Time-Saving Tips:

  • Protein Overnight Oats - Prep the overnight oats on the weekend. For protein powder, I love whey protein, hydrolyzed beef, or this pea protein.
  • Scrambled Egg English Muffins - Prep breakfast sandwiches on the weekend: use English muffins, scrambled eggs, and ham (or cooked bacon). Wrap each sandwich in parchment paper, store in a bag, pull one from the fridge in the morning, and reheat it in the microwave for a few seconds or in the oven on a sheet pan for a few minutes. I also like to add sliced avocado after reheating.
  • Caesar Salad Dressing - Make the dressing on the weekend and store it in the fridge for up to 4 days. Enjoy for lunch salads and on Tuesday night.
  • Grilled Chicken Thighs - Marinate the chicken up to 24 hours in advance. Make extra chicken for lunches for sandwiches, wraps, or salads.

Lunch Idea

Serve extra taquitos with an ice pack (room temp) or reheat and add to a thermos.

Snack Idea

Peanut Butter Banana Toast (my favorite food before the gym)

Einkorn Chocolate Cake

"I made this cake, ground the flour myself. I made it a layer cake with a chocolate ganache. It was unbelievable! My friend told me it was the best cake she ever had. The butter cream on top was the icing on the cake. I’ve decided to make it again for my wife’s birthday." -Wes
