🌮 what to eat this week (meal plan)


Hi,

I can't believe it's almost Christmas. To me, the highlight of Christmas Day (other than seeing family) is breakfast!

Here are a few of my favorite recipes:

But before we think about Christmas breakfast, it's time for this week's meal plan.



Time-Saving Tips:

  • ​​Omelet Cups​ - This recipe is perfect for such a busy time of year. Pair the omelet cups with yogurt and fruit, and have a protein-packed breakfast!
  • ​Instant Pot Chicken Noodle Soup- I make this recipe regularly during the fall and winter. It's comforting and easy! Grab a rotisserie chicken at the store this weekend, shred the meat, and store it in the fridge, then use the meat to make this simple recipe.
  • ​Chicken Enchiladas - Pick up a second rotisserie chicken (or roast a couple of chickens over the weekend). Make homemade enchilada sauce over the weekend, or buy a jar of pre-made sauce from the store (I love 365 Whole Foods or Siete brands).
  • ​Baked Oatmeal - One of my go-to recipes for a busy week. Bake the oatmeal on the weekend and enjoy it throughout the week with a protein side.
