😍 here's what I'm eating this week (meal plan)

We're back from working at the Olympics, and the kids are back in school. I'm slowly tackling the mountain of laundry and getting back into the school routine.

This week's meal plan features one of my favorite dinners to make during the school year: taquitos.

One of the reasons I love making taquitos is their versatility.

I double the recipe because they're perfect for the lunchbox! You can serve them cold with an icepack or cut them in half, reheat them, and place them in a thermos.

Time-Saving Tips:

  • Protein Overnight Oats - Prep the overnight oats on the weekend. For protein powder, I love whey protein or hydrolyzed beef.
  • Scrambled Egg English Muffins - Prep breakfast sandwiches on the weekend: use English muffins, scrambled eggs, and ham (or cooked bacon). Wrap each sandwich in parchment paper, store in a bag, pull one from the fridge in the morning, and reheat it in the microwave for a few seconds or in the oven on a sheet pan for a few minutes. I also like to add sliced avocado and arugula after reheating.
  • Ground Beef Taquitos - Double the recipe, serving half for dinner and the other half for lunch throughout the week.
  • Caesar Salad Dressing - Make the dressing on the weekend and store it in the fridge for up to 4 days. Enjoy for lunch salads and on Tuesday night.
  • Grilled Chicken Thighs - Marinate the chicken up to 24 hours in advance. Make extra chicken for lunches for sandwiches, wraps, or salads.
