The week got easier with this meal plan (June 24)

Hi,

I hope you're enjoying the weekend. Below, you'll find delicious recipes to simplify your week.

This week's meal plan features one of my favorite recipes: Sloppy Joe's.

What I love about this recipe is that you can serve it traditionally as a sandwich or spoon the meat over roasted sweet potatoes.

Sheet Pan Chicken Fajitas are on the meal plan this week. But instead of serving the fajitas in tortillas, we're making delicious bowls!

Time-Saving Tips:

  • Make the yogurt bowl parfaits in advance: spoon Greek yogurt into mason jars and top with fruit and honey (if desired). Store in the fridge, sealed, for up to 4 days.
  • Make the breakfast burritos in advance on the weekend, store them in the fridge or freezer, and reheat them in the microwave or oven.
  • Make the pancakes on Sunday morning, double the recipe. Enjoy pancakes for Sunday's breakfast and reserve the extra in the fridge for an easy grab-and-heat breakfast.
  • Use leftover dinners for easy lunches.
