👀 this week's meal plan (august 24)


Hey,

Now that school is back in session for many of us, I want to share not only this week's delicious meal plan but also a few of my go-to weekend recipes.

Here are 3 recipes that require a bit more time but make the best leftovers during the week (cook once, eat twice):


Time-Saving Tips:

  • ​Almond-Oat Blender Pancakes - Make a double batch on Sunday and enjoy all week for breakfast. I also love to turn the pancakes into pb&j sandwiches for school lunch.
  • ​Instant Pot Rice - Make a double batch on Monday night, using some rice for stir-fry and storing extra in the fridge for Tuesday's stuffed peppers.
  • ​Yogurt Bowls - Make a yogurt bowl in the morning, adding your favorite fruit and granola. Or, make a few mason jars in advance, filled with yogurt and your favorite fruit, then top with granola before enjoying. I use Greek yogurt for the protein content.
